I will agree with this diagnosis ( I had the same problem). When the water pump starts to fail ( it starts to leak imperceptably out it's weep hole) it replaces the coolant with...AIR. Since the weep hole is higher than the t-stat the air bubbles rise (usually when it's not running) into the engine rather than the radiator and creates a hot spot and the temp spike. One quick *remedy* when it spikes is to turn your heater up to its hottest and might be able to blow that air through the system and into the radiator. Then refill the rad when it cools.
