Under the hood detailing..

What stuff do you guys use to keep the plastic looking new and what is the best thing to clean muck off the engine that has not been cleaned properly in years. I wanna make her shine like new.

As for the hoses you can use a variety of things:

Armorall
Tireshine
Back to black
etc....

For cleaning the engine bay you may need to get in there and do some scrubbing. I'm sure there are engine baths but I don't know how far gone your engine bay is.

Make sure you dont use a degreaser as it will create little 'spots' on the aluminum manifold. To make everything shine, give the engine a good cleaning, then spray everything down with armorall. Close the hood, start the engine and run it till it heats up a little, then shut it off and let it bake the armorall on. It will look great!

I also recommend Mothers Mag Polish for the AC piping. It will make it come out like a mirror...
