^^^ I know the "recommended" offset is 45-50mm..... correct?

Do you forsee any issues with using a wheel the size listed above?

Tire size recommendations on the stock suspension?

40 mm offset is going to be real close. It will probably wear on the plastic inside the rear wheel wells

It depends on the tire you mount on that wheel

I'm "thinking" a moderately sized 225/45/17.

But again... open to suggestions and recommendations.

ditto with Nate, that is where you should look. I ran 235/40/18 with 45mm offset, so 225 with 40mm offset with 'moderate' tire is the same spacing, but it will be close. I think Dayle runs 225/40/18 with Murano wheels, I think those wheels are closer to 35mm offset.
