Umm, doesn't the offset need to be a little higher; +53mm? (I know that's what the STI wheels are)

Ideally yes, you'd want a bit more offset. However, if you go with a slightly narrower tire (225/45/17) you'll probably be fine. The 17x8 +53 BBS's have plenty of room to spare.
