So with those rubbers you are over 1" less sensitive (higher) to the ground. I'm surprised they fit. The only problem you will find is that mud/snow will pack easier inside the fenders.
I would still recommend 205/60-16's for winters.

I didn't think about snow packing up in there. That happened a lot even with my crap tires.
