Subarus are nortorious for getting air pockets in the engine when drained and refilled, best to park it on a steap up-hill incline overnight after it's been brought up to operating temp.(front of car up-hill)
They have to be warmed up and then cooled down to burp out the air, and suck back in water from the overflow tank, sometimes it takes a few times to get it all. It'll probably be fine by now as long as you've kept it topped off for a few times of getting warmed up and cooled off.... If not it must be something else.
