I have lived in Lebanon all of my life and have never run across the type of bologna you are describing. Venison bologna is usually a mixture of beef and venison, and is harder due to the lower fat content.
I would say that is probably what you had. I will try to get some from one of my hunter friend's to bring to Reading if I can.

We were tearing around some of those country roads last year at Reading... Had some of the kids staring at me as I'm drifting that little Miata through some turns

That was one of the things I remembered most vividly about the first Reading meet. At one point, the line of 23 cars was going past a big Amish home with several children playing in the yard. It was surrounded by a white picket fence. As we passed, I noticed the kids had stopped playing and we saw three little faces, squished between the slats in the fence, watching the cars pass, and smiling. It was priceless!
