AC overheat switch sensitivity

Perhaps someone can explain the settings on the AC compressor overheat switch. My cooling system probably isn't perfect, but on a seriously hot day, it doesn't take much of a hill to make the AC compressor shut off or sometimes half shut off. Per the temp gage it is about .020 movement of the needle from exactly the half way point. I have checked the radiator and hoses with an infrared thermometer at idle and they are well below 200, more like 185/190. I would like to get rid of that sensor if it is a separate. Anybody tried it?
