earthworm said it right, the engine will run in closed loop mode until its warmed up, closed loop just means its not taking any reading from the o2 sensors that may be why there was no CEL when you unplugged them.
try running or driving it for about 15-20 then shut it down and unplug the 02 sensors and restart. hope this helps
