Thats quite normal on a fresh installation. Once installed, the shop usually uses a steamer to tighten up the leather ans get rid of the wrinkles. parking it in the hot sun for a couple of days shrinks the leather so it conforms to the foam and becomes very smooth.
Years ago, I had a dark gray leather interior installed on my wife's silver 97 Legacy GT. Arrived at the shop just as they were putting it all back together. It looked very loose with lots of wrinkles.
The shop assured me that was normal and I watched as he steamed the entire interior and within 20 minutes it was smooth and wrinkle-free. The shop said it was much easier to move and align the covers into the proper position, getting seams straight, etc. Once in place. everything was set by the steamer. Once done. there were no problems and the leather got better and better.
