I had another subaru that was doing exactly the same thing: ocasionally the coolant temperature was rising without reason.
Bad news!
It was the head gasket. One indication is if your water level goes down and if you have steam coming out of the exhaust.
There was no problem at the beginning but it accentuated and at the end it was obvious.
Check that (hope you have something much simple- fan failure).
