Is there any way to visually inspect the bearings to see if they're done for? Since I'm changing brake discs, should I just have the bearings replaced at the same time in order to save work time?

A bearing that's failed to the point of allowing vibration would almost certainly be making a very conspicuous, grinding roar. (This would be a dangerous condition.)
Can you jack the car at each front corner and give each wheel a tug and spin to check for obvious free play and/or noise?
