You definitely don't want to make it out of Carbon Fiber... Unless you just have a ton of money burning in your pocket... Think about the properties of carbon fiber for a second... Now think about the first time you hit something, anything hard in the road which would put alot of force on it...

In short, carbon fiber is very strong, but only in longitudinal direction... In other words parallel forces (push or pull) along the surface of the material... However when carbon fiber receives a perpendicular "blow" it doesn't dent like aluminum would, it shatters... Aluminum is light enough and is what you should be building a skid plate out of... Look at Rally Cars... Aluminum...
