Speed Sensitive Steering
So this may be a simple to answer question, but could someone please explain how the speed sensitive steering works. It doesnt seem to be something that I notice while driving, but I assume that you have to turn the steering wheel less at higher speeds to turn the car?

No, it simply varies the power assist. At low speeds, the assist is high, so that the wheel turns easily while parking and such. At high speeds, there is little assist so that the car feels more natural and doesn't dart around. It is pretty seamless and you can't really notice it unless you drive an SVX with the engine sensing type. It is a pretty simple system that is pretty common place nowadays. Even cars like the camry have it, but it was pretty advanced back then.
